This is the whole list. It is short because we checked what the site actually stores rather than describing what a site like this usually stores.

Both are first party, meaning they are set by this site and never sent anywhere else. Neither carries an identifier, and neither can follow you to another site. Nothing is stored in local storage.
Why is there a cookie banner at all, then?
Because of something that has not happened yet. If we ever embed something from another company, a map or a booking form, that company can set cookies of its own on your device the moment it loads. The banner asks permission for that in advance, so an embed can never appear without you having been asked.
Today there are none. We loaded every page of this site and it contacted no other server at all. If that changes, this page and the banner change with it, on the same day.
How we count visitors without a cookie
We do want to know which pages are read. We just do not need to know who read them.
Our own measurement stores a page address, a date and a one way scramble of your network address mixed with a secret that is thrown away and replaced every night. It is enough to tell one visit from another during a day, and it cannot be reversed. After midnight even we cannot tell that yesterday and today were the same person, because the secret that would have linked them no longer exists.
That is not a cookie and it is not tracking, which is why the banner does not ask you about it. It is also why there is no Google Analytics on this site.
Changing your mind
Nothing here is permanent. Every browser can show you the cookies a site has set and delete them, usually under settings and privacy, and deleting ours costs you nothing except being asked the question again.
Choosing Necessary only does not degrade anything. There is no feature behind that wall, no reduced version of the site and no reminder later. It is a real choice and it is why the two buttons are the same size.
